Hey, this cooking thing isn’t so bad

So tonight I tried my hand at cooking something for dinner. I mean from scratch, not zapping a frozen dinner in the microwave.

I mean, I’ve done some cooking before, but basic stuff like fried rice or dumping stuff into a crock-pot. That’s the easy things, tonight I actually did something that required chopping and cutting and de-glazing the frying pan and all that stuff. It was actually pretty fun.

The recipe I tried was something I’d seen on the Food Network–Apricot Chicken. I picked it because it’s a one-pan kind of dish, and doesn’t have that many ingredients to worry about. I just had to dice some boneless chicken breasts, coarse-cut some dried apricots, and chop up an onion. The other ingredients came in bottles or cans–apricot preserves, apple cider vinegar (for the de-glazing part), chicken stock.

Turned out much better than I could have hoped for, given this was my first try with the recipe. Looked pretty much like it had when I saw Rachel Ray prepare it on her show, 30 Minute Meals.

The big problem is that it looks like it made about four or five servings. So I’m gonna be eating it basically all week long, right up until Thanksgiving. Good thing it tastes okay.
